It took me two years to forge the prefect balance of this dessert. I proudly call it my signature dish! I had the form (the silhouette of the continent), but not the soul! How could I create something that would remind each African of their origins with every bite? I, therefore, set about crafting a map of the fruits and spices that every African could identify with.
In a land of crumble and manioc flour mixed with cacao and spice, this African dessert varies with the season to incorporate the freshest ingredients, amongst which you may find mango, peanuts, hibiscus cream of dates, a blend of ginger, amarula, deconstructed brioche and refreshing passion fruits.
